So much for being good to go first thing – we left the house
at about 11:30 though we did have plenty of time to make the four hour scenic
drive to the Tongariro Holiday Park site where we’d be stopping for the next
two nights.
After checking in we also booked a shuttle bus, for
tomorrow, to take us to the start of the famous, and voted NZ’s best, one day
walk – The Tongariro Alpine Crossing. The shuttle bus will also take us back to
the site if we make it to the end of the walk!
Then we decided to go get some more supplies for the walk as
we’d not realised how little an amount food we’d thought about taking. The
supermarket turned out to be about 23km north of where we’re at so we also
decided to fuel up whilst in the town.
Back at the campsite we were very hungry and came to the
conclusion that an early tea would be a great idea; especially seeing as we’d
somehow forgotten all about lunch! This, it seems, was not all we’d forgotten
as, on opening the cool box we were both overcome with large amounts of
confusion. After a minute or so we realised we’d left all our fresh supplies of
salad and veg in the bottom drawer of Paul and Judy’s fridge. This left us with
our stir-fry components of: Noodles, teriyaki sauce, stir-fry beef, and an
onion. Neither of us wanted to drive the 50km round trip to get some veg so we
just stood staring at these few ingredients. We then noticed that the on-site
café had just opened and so wandered over to that and were greeted inside by a
very puzzled looking attendant… “Yes, we’d just like to buy some vegetables if
you can spare some please?” After a few moments he went and got someone else
who, though equally perplexed by our question, managed to bag up a green pepper
and a large carrot to sell to us for the moderate sum of $3.
We worked our magic in the kitchen, throwing in our newly
acquired healthy bits and created another culinary masterpiece of a stir-fry.
We added more noodles to give us the carbs we’d be needed tomorrow.
Then it was back to the van for some reading and an early
night. We just hope the weather is nice for the day ahead.
